These Stuffed sun-dried tomatoes are always a big hit as an appetizer for friends and family, but good luck finding whole sun dried tomatoes. Since they are easy to make I tend to make them a lot.
- 6 Tomatoes
- Breadcrumbs (see recipe)
Soak tomatoes overnight in water. Fill tomatoes with seasoned breadcrumbs and chopped parsley. Fry filled tomatoes in oil. Remove with slotted spoon. Drain on paper towel.
