The smell of this Pumpkin Pie Rice Pudding while cooking on the stove is amazing! Brown sugar and pumpkin taste great together.
- 1 cup cooked white rice
- 18 oz carnation evaporated milk
- 1 cup pumpkin
- 1/2 cup packed dark brown sugar
- 2 tsp pumpkin spice
- 1/4 tsp salt
- 1 tsp vanilla extract
First I cook my rice, for the Pumpkin Pie Rice Pudding. After cooking rice, place all the ingredients, except the vanilla, together into one pot on the stove. Cook over medium heat, stirring frequently. Since the rice is cooked, you are just mixing the ingredients and letting the flavor absorb into the rice.
Remove from heat and stir in vanilla. Let stand for 5 – 10 minutes and serve.
Garnish with graham crackers, whipped cream, pecans, if desired.
