I can picture sitting at my husband’s Nona’s table eating pinelli with a nice Italian roll with a bit of lemon squeezed on it. Oh my god! So good. Some recipes call this Italian chick pea flat bread.
Ingredients
- 2 cups warm water
- 1 cup chick pea flour
- Bel Gioioso shredded Parmesan cheese
- Parsley
- Morton Iodized salt/McCormick ground black pepper
Directions
Mix water and chick pea flour with your hands. Combine 1 handful of Parmesan cheese, parsley, salt and pepper to the mixture. Cook on the stove stirring constantly until thick. Spread quickly on a wet board. Let dry and cool. Cut into pieces and fry.
More about Pinelli
One of the more common Italian street food is farinata, or Pinelli.
