This gluten-free pasta with lentils recipe is wonderful. Having an Italian family I use Jovial gluten-free pasta because, at least to us, it tastes the closest to “real pasta”.
- 1/2 bag Fiesta lentils
- ½ large onion
- 6 carrots
- 1 potato
- 4 tbs Bertolli extra virgin olive oil
- Morton iodized salt/McCormick ground black pepper
- Jovila gulten-free spaghetti
- 3 Knorr bouillon beef cubes
Rinse lentils. Cut one small potato in cubes and dice carrots and onions. Boil for a few minutes to soften and then add half bag of lentils to water. Add oil, salt, and pepper and cook till lentils are tender, about ½ hour. Boil Jovial gluten-free pasta. Drain some water and save some leaving pasta soupy. Add lentil mixture and serve.
Sprinkle with Parmesan cheese to garnish.
