A delicious way to bake eggplant. I think this tastes best with seasoned breadcrumbs but add whatever your favorite seasonings are and enjoy.
- 1 Eggplant
- 2 1/2 cups Seasoned bread crumbs (see recipe)
Take some skin off eggplant. Cut eggplant ½ inch thick and soak in cold water for about 1 hour, then drain. Dip slices of eggplant in oil, then seasoned bread crumbs. Spray cookie sheet and place in oven. Bake 350 degrees for about 10 minutes on each side. If you want the eggplant crispier, place under broiler for 5 of the 10 minutes. Eggplant also may be fried if you wish to do so.
