This gluten-free meatball recipe is great! The Chex corn cereal mixes with the other ingredients perfect. If you don’t want to make all the meatballs at once, freeze the meat mixture for later use.
Ingredients
- 1 lb. veal
- 1 lb. pork
- 1 lb. lamb
- 3 clove garlic- chopped
- 2 cups crushed Corn Chex cereal
- 3/4 cup Tamarack cellars firehouse red Columbia valley wine
- 6 Wilcox eggs
- Fresh chopped parsley
Directions
Mix all ingredients in a bowl. Form into round balls about 1″ around.
In a skillet with olive oil, brown meatballs. Add to pasta sauce and simmer 15-20 minutes.
