This gluten-free cream cheese pillow cookie recipe tastes just like the original. All I really needed to do with this recipe was change out the flour the the Cup 4 Cup gluten-free flour. Add your favorite jams or jellies and enjoy!

Ingredients

  • 1/2 cup butter
  • 1 cup Cup 4 Cup gluten-free flour
  • 3 oz cream cheese
  • your favorite flavored jams
  • sugar

Directions

Preheat oven to 350 degrees.

Using a mixer, cream the butter and cheese together. Next, blend in the flour with the butter mixture. Place the dough in a small bowl, covered with saran wrap, and place in the refrigerator to chill the dough for about fifteen minutes.

Roll cookie dough very thin, on a lightly floured surface. Cut out with a 2 1/2″ circle cutter and place on an ungreased cookie sheet. Spoon 1/4 teaspoon of your favorite jam into the middle of the cut out. Moisten edges of the cookie and fold over, to form a half circle. Use fork tines to press together the edges of the cookie to keep the jam inside. Cook for about 12 minutes or until golden brown.

Sprinkle with sugar directly after taking the cookies out of the oven.
