Italians have Lentils on New Years Eve for a prosperous year. This pasta with lentils recipe is just one of those memories that I continue with my family.
- 1/2 bag Fiesta lentils
- ½ large onion
- 6 carrots
- 1 potato
- 4 tbs Bertolli extra virgin olive oil
- Morton iodized salt/McCormick ground black pepper
- pasta – small or Barilla spaghetti
- 3 Knorr bouillon beef cubes
Rinse lentils. Cut one small potato in cubes and dice carrots and onions. Boil for a few minutes to soften and then add half bag of lentils to water. Add oil, salt, and pepper and cook till lentils are tender, about ½ hour. Boil pasta. Drain some water and save some leaving pasta soupy. Add lentil mixture and serve.
Sprinkle with Parmesan cheese to garnish.
More about Pasta with Lentils
Lentils range in color from black, brown, red-orange to green. They are shaped like a coin and are traditionally served on New Year’s Eve in Italy and Hungary to symbolize hope for the new year. It is believed that lentils date back to the Neolithic times, around 9,500 to 13,000 years ago.
