Italians have Lentils on New Years Eve for a prosperous year. This pasta with lentils recipe is just one of those memories that I continue with my family.
Ingredients
- 1/2 bag Fiesta lentils
- ½ large onion
- 6 carrots
- 1 potato
- 4 tbs Bertolli extra virgin olive oil
- Morton iodized salt/McCormick ground black pepper
- pasta – small or Barilla spaghetti
- 3 Knorr bouillon beef cubes
Directions
Rinse lentils. Cut one small potato in cubes and dice carrots and onions. Boil for a few minutes to soften and then add half bag of lentils to water. Add oil, salt, and pepper and cook till lentils are tender, about ½ hour. Boil pasta. Drain some water and save some leaving pasta soupy. Add lentil mixture and serve.
Sprinkle with Parmesan cheese to garnish.
