Chicken Parmesan is my absolute favorite Italian dish. If you already have the bread crumbs and pasta sauce made for this, it is a very quick dinner for the family.
Ingredients
- Italian bread crumbs (see recipe)
- Red pasta sauce (see recipe)
- 8 chicken tenders
- Melted butter
- Mozzarella
Directions
Preheat oven to 400 degrees.
Use a meat tenderizer to flatten chicken tenders. Melt the butter. Dip each piece of chicken in the butter then into the bread crumbs. Place on a foil lined baking sheet. Cook for 10 minutes each side. For the last two minutes, use the broiler to brown each side of the chicken. Remove the breaded chicken from the oven.
Place the chicken in a 9 x 13 Pyrex dish. On top of each piece of chicken, spoon some red pasta sauce and then mozzarella cheese. Place under the broiler until cheese is melted and brown.

The origins of parmigiana is unclear as both the southern and northern regions of Italy claim the title. Parmigiana is an Italian dish that is baked. The filling varies from chicken to eggplant. It is often layered with cheese and a tomato sauce.
