I honestly have to say that it took me a couple times to get the right amount inside this Spedini recipe, but after you know how much, they turn out perfect!
Ingredients
- 1 lb. sirloin chip steak- think (or eye of the round)
- 1 onion
- Seasoned bread crumbs (see recipe)
- San Marzano whole Peeled tomatoes
- Fresh bay leaf – if not fresh soak in water to make soft
- Chunk of provolone cheese or Caciocavallo cheese
- Spedini stewers
Directions
Cut steak in small pieces, just big enough to roll. Coat steak with the breadcrumbs. Saute onions in a pan till tender. Place in onions, peeled tomatoes, and cheese in bowls to easily pick from when rolling the spedini.
Place a piece of onion, tomato, and cheese on a piece of steak and roll it. Place the steak on a skewer. In between rolled up pieces of steak, place a bay leaf. Fill skewer up.
Bake at 350 degrees for 30 minutes or until golden brown, turning skewers at least once while cooking. After meat is cooked pull off skewers and serve.
