I usually make Italian Green Bean salad when we have a lot of company. The crisp green beans, tomatoes, cucumbers, cherry tomatoes and red onions seem to appeal to many people and serve many. This salad is easy to make and prepare the day before an event. Just don’t add the oil or vinegar until you are ready to serve.
- 3 big hand fulls of fresh Green beans
- 6 Red skin potatoes / or small white potatoes
- 1 Red onion
- 1 Cucumber
- 1 basket cherry tomatoes
- Bertolli extra virgin Olive oil
- Morton Iodized salt/McCormick ground black pepper
- Beaufor red Wine vinegar
Snip tip off green beans. Wash and boil until tender, drain and cool in refrigerate.
Boil small red skin potatoes or small white potatoes. Drain and cool. Peel skin off and cut into pieces.
Cut red onion, cucumber, and tomatoes. Mix together with the green beans and potatoes. Add olive oil, salt/pepper and wine vinegar to taste.
