I’ve been looking for yummy recipes that my family will enjoy that are gluten-free. This guacamole deviled egg recipe is amazing!

Ingredients

  • 6 large Wilcox eggs
  • 1 tbsp chopped cilantro
  • 1 tsp minced red onion
  • 1 tbsp minced jalapeno
  • 1 medium haas avocado
  • 1 tbsp diced tomato
  • sea salt and pepper to taste
  • chile powder

Directions

Your first step is to hard boil your eggs. Place your eggs in a pot of water and bring to a boil. Remove the pot from the hot burner and place a lid on top. Set your timer for 20 minutes. After 20 minutes, empty the water from the pot. Cover the eggs with ice and a bit of water. When the eggs are cooled, dry a set aside.

While you are waiting for your eggs to cook, get to chopping. Set aside the chopped cilantro, red onion, jalapeno, avocado, and tomato.

After the eggs are cooled, peel, cut, and remove the yolk. Add 3 full yolks to the avocado in a bowl and mix together. Add your other chopped items and add salt and pepper to taste. Fill the halved eggs with the guacamole mix. Sprinkle the top of the deviled eggs with chili powder and enjoy!
