This grain free spinach cilantro meatball recipe is amazing! And that is coming from a family of Italians. Of course, we add a dash of red wine into the ingredients sometimes though. These meatballs are great for our family since we have to simplify our eating. Enjoy!
Ingredients
- 1 lb pork
- 1 lb lean hamburger meat
- 1/2 medium onion – chopped
- 1 tsp sea salt
- 2 cups baby spinach – chopped
- 1/2 cup fresh cilantro – chopped
- 2 eggs – whipped
Directions
Heat a large pan on your range.
Combine all the ingredients in a large bowl. Roll the meatball mixture into small balls and set aside. Spray your pan with cooking oil, to help prevent sticking. Cook the meatballs until they are brown all the way thru.
This recipe makes so many grain free spinach cilantro meatballs that I separate the uncooked meatball mixture into thirds. I freeze the extra two servings for another day.
