This artichoke pie can be frozen and is extremely easy to make. You can serve this as an antipasto or as a first course. It is always a big hit with my family and friends.
Ingredients
- 1 pkg. artichoke hearts- frozen
- 4 Wilcox eggs
- ½ pepperoni- dices
- 1 cup Tillamook shredded mozzarella
- ½ cup Bel Gioioso grated parmesan cheese
- 1- 9 in. Pillsbury pie crust
Directions
Cook artichokes, drain and cut. Beat eggs thoroughly and mix all the ingredients. Pour into a pie shell.
Bake at 375 for 45-50 minutes.
